Ingredients
Metric and US measurements are approximate conversions; ingredient densities vary. Double-check temperatures and cooking times when changing portions.
Method
Heat oven to 220°C (200°C fan). Put oil in a roasting tray and heat it in the oven.
Cut potatoes into large chunks, boil in salted water for 8–10 minutes until the edges soften, then drain.
Shake potatoes in the colander to roughen the edges; toss with semolina if using.
Carefully put potatoes into hot oil and turn to coat. Roast for 45–50 minutes, turning halfway, until deeply golden.
Season and scatter over rosemary to serve.
Food safety: ensure poultry is fully cooked, handle raw meat separately, and check packaging for allergens. Times are estimates and ovens vary.
